Baby Potatoes Fry

Hi Guys!! Today I am going to share the recipe of “Baby Potatoes Fry”, which is one my husband’s favourite dish. Some people have little idea about the Baby Potatoes as they are difficult to find in the market. Baby Potatoes are those potatoes, which are removed from the soil before they fully grown. Due to this, they taste a bit sweet & buttery flavor. They are used worldwide in variety of dishes from Salad to Main course. As far as health benefits are concerned they are less in calories and naturally fat free. They contain good source of minerals and moderate source of vitamin C, B1 & B6.  You should try “Baby Potatoes Fry” sometimes as the dish is delicious and very easy to cook. Here is the recipe, if you want to try…

Ingredients:
·         Baby Potatoes – 200 gms
·         Onion(Chopped) – 2 (Medium)
·         Cumin  Seeds – ½ tsp
·         Turmeric Powder – 1 tsp
·         Red Chili Powder – 1 ½ tsp
·         Cumin Powder – 1 tsp
·         Coriander Powder – 1 Pinch
·         Sambar Powder – ½ tsp
·         Salt as per taste
·         Cooking Oil – 3 tbsp

Prepartion Method:
Ø  Wash and boil Potatoes in a Pressure Cooker until 2 whistles. Cut the boiled Potatoes in 2 parts.
Ø  Heat Oil in a Pan and add Cumin Seeds, when they crackle; Add Chopped Onion and saute for 2-3 mins in medium flame.
Ø  Then add the boiled Potatoes and stir for 5 mins in medium flame.
Ø  Add Turmeric Powder; Red Chili Powder; Cumin Powder; Coriander Powder; Sambar Powder; Salt & mix well.
Ø  Cover and Cook the mixture for 3 mins..
Ø  Uncover and cook for another 5-7 mins in low flame.
Ø  Now the “Baby Potatoes” Fry is ready.

“Baby Potatoes Fry” ” is well served with Steamed Rice, Fried Rice, Pulao, Roti, Paratha and even with Puri.

Masala Upma

Hi Guys!! Today I am going to share a very simple and delicious breakfast recipe called “Upma”. Upma is originated from Southern part of India. There are many ways of cooking Upma. Either you can cook in a very simple way or you can add wide range of vegetables. In case of Masla Upma, Garam Masala or Sambar Powder can be added. Here is the recipe for Masala  Upma, if you would like to try at your end….

Ingredients:
·         Rava/Sooji– 1 Cup
·         Cabbage – ½ Cup
·         Green Peas (Frozen)  – ½ Cup
·         Cauliflower – ½ Cup
·         Carrot – ¼ Cup
·         Onion – 2 medium
·         Green Chilly – 4
·         Curry Leaves  - 5
·         Tomato – 1 (Medium)
·         Urad Dal – 1 tbsp
·         Ginger – 1 tsp
·         Cumin Powder – ¼  tsp
·         Sambar Powder – ¼ tsp
·         Salt as per taste
·         Cooking Oil – 3 tbsp
·         Water – 2 Cup

Preparation Method:
Ø  Cut Cauliflower in small florets; cut Carrot in small cubes.
Ø  Wash and drain the cut vegetables.
Ø  Cut Cabbage in long and thin slice.
Ø  Slice Onion; Green Chilly and Crush Ginger.
Ø  Take a wide Pan and dry roast Rava / Sooji until it turns light brown and take it out from heat.
Ø  Heat Oil in the same Pan.
Ø  Add Urad dal and fry for 3 sec.
Ø  Add Green Chilly; Curry Leaves; Onion; Crushed Ginger and fry for 3-4 mins on medium flame.
Ø  Add cut Vegetables; Green Peas and stir for 5 mins.
Ø  Add Cabbage and fry for 2 mins.
Ø  Add Cumin Powder; Sambar Powder and mix well.
Ø  Add Tomato and fry for 2 mins.
Ø  Add Water; Salt and boil for 5-7 mins on high flame.
Ø  Add the roasted Rava in the boiling water and mix quickly to avoid lumps.
Ø   Then cook till it absorbs water and remove from heat.
Ø  Now the Upma is ready. Finally cover it for 3 mins before serve.
“Masala Upma”  is well served with Coconut Chutney and Besan Chutney.


Chicken Curry(Indian style)

Hi Folks!!  Today, we’ll talk about a recipe made of Chicken. Chicken is one of the safest low fat meats and widely consumed around the globe because of its great taste.   It can be cooked in many ways as per your own choice such as either be deep fried or Baked, used in Soup or Salad or can be used in Curry too. In terms of curry Chicken curry is very much famous in Indian Sub continent. Here is the recipe in case you would like to try…

Ingredients:
·         Chicken Breast Pieces – 2
·         Potato(Optional) – 1(Large)
·         Onion – 2 (Medium)
·         Ginger – 1 ½  inch piece
·         Garlic Cloves  – 5
·         Cinnamon Stick(Dalchini) – 1(Medium)
·         Bay Leaf (Tej Patta) – 2
·         Red Chili Powder – 1 ½ tsp
·         Turmeric Powder – ½  tsp
·         Cumin Powder – 1 tsp
·         Sambar Powder – 1 tsp
·         Salt as per taste
·         Sugar – 1 tsp
·         Tomato Puree- 1(Medium)
·         Vinegar – ½ tsp
·         Cooking Oil – 3 tbsp (Preferably Mustard Oil)

Preparation Method:
Ø Cut Chicken in Medium Cubes and marinate with Turmeric Powder; ½ tsp Red Chilly Powder and Vinegar. Leave for 10 to 15 mins.
Ø  Cut Potatoes in big cubes and Onion in Slice.
Ø  Grind Ginger and Garlic to make a coarse Paste rather than fine paste.
Ø  Heat the Oil in a Heavy bottom Pan/Pressure Cooker.
Ø  Add Sugar in the Oil and wait till it turns golden brown.
Ø  Add Cinnamon Stick; Bay leaf and fry for 5 sec.
Ø  Add Sliced Onion and fry till it turns light golden.
Ø  Add Ginger-Garlic paste and fry till its raw smell goes off.
Ø  Add Marinated Chicken Pieces and cook it by covering the Pan for 15 mins.
Ø  Add Potato pieces and fry with the chicken for another 10 mins.
Ø  Add Tomato Puree; Red Chilly Powder; Cumin Powder; Sambar Powder; Salt and mix well.
Ø  Cook for 5 mins.
Ø  Add little Water and mix well.
Ø  Cover the lid and cook for 5-7  mins.
Ø  Now the “Chicken Curry” is ready.

“Chicken Curry” is well served with Steamed Rice, Roti, Paratha and Pulao.

Stir Fry Mushroom

Hi Guys!! In addition to our Thai dish category, I’m going to share a recipe about how to cook  “Stir Fry Mushroom”.  As you know that Mushroom has huge health benefits as they are rich in Calcium, Iron, Potassium, Copper and Selenium and regular intake of it is very effective in preventing Cancer, Diabetes and Immunity. Since Mushrooms are low in calories and fat free nature, they are ideal food for people looking for weight loss. Mushrooms are also very easy to cook and tastes better than any other vegetables. Here is the recipe in case you would like to try in your kitchen...

Ingredients:
·         Mushroom – 150 gms/1 pkt
·         Garlic – 1 large Clove ( minced)
·         Oyster Sauce – 2 tbsp
·         Soya Sauce – 1 tbsp
·         Pepper Powder – 1 tsp
·         Sugar – 1 tsp
·         Ajinomotto – 1 tsp
·         Thai All Seasoning Powder – 1 tsp
·         Corn Starch – 1 tsp
·         Cooking Oil – 2 tbsp
·         For Garnishing – Sliced Red Chilly

Preparation Method:
Ø  Clean the Mushroom and Keep aside.
Ø  Take Oyster Sauce and Soya Sauce in a bowl and mix it well.
Ø  Take Corn Starch with little water and mix it well.
Ø  Take a Pan and heat ½ tbsp of Oil.
Ø  Add Mushrooms and fry for 2 min and take it out from Pan.
Ø  Heat the remaining ½ tbsp of Oil in the same Pan to prepare sauce.
Ø  Add minced garlic and sauté for 5 sec.
Ø  Add the prepared mixture of Oyster Sauce and Soya Sauce.
Ø  Add Ajinomotto; Pepper Powder; Sugar; Thai All Seasoning Powder and mix it well.
Ø  Add little water and boil it for 3 mins.
Ø  Add mixed Corn starch and Cook itll it forms a semi thick sauce.
Ø  Add the fried Mushrooms and cook for 5 mins.
Ø  Now Stir Fry Mushroom is ready. Garnish it with Sliced Red Chilly.
“Stir Fry Mushroom” is well served with Steamed Rice and Thai Fried Rice.

Green Curry Chicken (Gaeng Kheiw Waan Gai)


In addition to our Thai dish category, today we’ll talk about Green Curry Chicken (Gaeng Kheiw  Waan Gai), which is one of the most popular and common dish in Thailand. Basically, Green Curry is originated from central part of Thailand. Mostly Thai dishes are identified with their Colours, such as Red Curry, Yellow Curry, etc. Since the colour of the dish looks Green, because of green paste, it’s famous as Green Curry. You may also use Beef, Pork or fish instead of Chicken as per your taste. Like other Thai dishes, the cooking process of Green Curry is also very easy. It takes only 10 to 15 minutes to cook. Here is the Recipe in case you would like to try.

Ingredients:
·         Chicken (Breast Pieces) – 2
·         Thai Egg Plant – ½ Cup
·         Thai Green Curry Paste – 2 tbsp
·         Coconut Milk – 1 Cup
·         Green Chilly – 2 nos
·         Sweet Peas – ½ Cup
·         Kaffir Lime Leaves – 2 torn
·         Jalapeno Pepper – 1 small bunch
·         Sweet Fresh Basil Leaf – ¼ Cup
·         Small Red Onion – 2 Nos
·         Fish Sauce – 1 tsp
·         Palm Sugar – 1 tsp
·         Cooking Oil – 1 tbsp
·         Chicken Stock/Water – 2 Cup
·         For Garnishing – Thai Sweet basil and Red Chilly sliced

Preparation Method:
Ø  Cut Chicken breast in small pieces.
Ø  Cut Egg Plant sliced in 4 pieces each.
Ø  Cut Onion in 2 pieces.
Ø  Heat the Oil in a Wide Pan.
Ø  Fry the Chicken pieces for 2 mins and take it out of heat.
Ø  Add ½ Cup Coconut Milk in the same Pan and stir for 3-5 mins in medium heat.
Ø  Add Green Curry Paste and Saute till the mixture gets dry and aroma comes out.
Ø  Add the fried Chicken pieces and Saute for 1 min.
Ø  Add Fish Sauce; Palm Sugar and sauté for 1 min.
Ø  Add Cut Egg Plant and remaining ½ Cup Coconut Milk.
Ø  Add Chicken Stock/Water and cook in medium heat until the Chicken gets tender and the Egg Plants are cooked.
Ø  Add Kaffir Lime Leaves; Sweet Basil Leaf; Sweet Peas; Jalapeno Peppers and boil it for 5 mins.
Ø  Remove the Pan from heat.
Ø  Now the “Green Curry Chicken” is ready.
Green Curry Chicken is well served with Steamed Rice and Thai noodles called Khanom Chin.
