Egg Curry



Eggs are the common and a versatile foodstuff that being used over the period. They have been widely used from boiled to bake and from sweet to curry based stuffs. As compare to other food stuff the price of eggs are relatively affordable and are easily available throughout season too. The dishes made of eggs are not only delicious but also have high nutritional value, therefore they are recommended to be a part of regular diet.

Nutritional Facts:

Eggs are excellent source of protein with all nine essential amino acids that strengthens and tones the muscle areas of the body. Eggs are a good source of choline which helps regulate the brain, nervous system and cardiovascular system. Research says that eggs are good for eyes and an egg a day may prevent macular degeneration due to lutein and zeaxanthin. Eggs also have high sulphur content that helps to promote healthy hair and nail. Some research says that eggs are good for women as they may prevent the breast cancer. A regular consumption of eggs will help prevent blood clots, stroke and heart attacks.

Ingredients:
  • Egg - 3 nos
  • Potato (Optional) – 1 (Medium)
  • Onion Paste -1 (Medium Size)
  • Ginger Paste – 1 tsp
  • Garlic  Paste- 2 tsp
  • Tomato Puree- 1 (Medium Size)
  • Cumin Powder-1 tsp
  • Coriander Powder-1 tsp
  • Garam Masala- ½  tsp
  • Turmeric Powder- 1 tsp
  • Red chili Powder- 2 tsp
  • Salt as per taste
  • Cooking Oil - 3 tbsp

Preparation Method:
Ø  Boil Eggs and Potato for 15-20 mins.
Ø  Let it cool down and take out the skin of Eggs and Potatoes.
Ø  Then cut Potato in half and slit the eggs on the top.
Ø  Heat 1 tbsp of Oil in a Pan and shallow fry the boiled Eggs and Potato till golden brown.
Ø  If you like you may cut the eggs into half.
Ø  Heat remaining 2 tbsp of Oil in the same pan.
Ø  Add Onion paste and sauté till it turns light pink.
Ø  Add Ginger Paste, Garlic Paste and sauté till its raw smell goes off..
Ø  Add Tomato Puree and sauté till it separates Oil.
Ø  Add Turmeric powder, Red Chili powder, Cumin powder, Coriander powder, Garam Masala, Salt and sauté for 2 mins.
Ø  Then add Fried Eggs & Potato and cook for 2 mins.
Ø  Finally, add ½ Cup of Water and cook till its gravy gets thicker.
Ø  Now the “Egg Curry” is ready.  Serve hot.

“Egg Curry” is well served with Steamed Rice
