Lemon Shrimp (Goong Maa Now)


In addition to our Thai Cuisine Category, we will talk about a popular dish made of Shrimp with Lemon and Garlic called “Goong Maa Now”. This is a very tasty and elegant dish with very little ingredients and hardly takes time to cook.

Health Benefits
Shrimps are considered to be a healthy food. They are good source of protein, which helps in overall growth and development of our body. They are rich in Selenium and Selenium is likely to protect us from the growth of cancer cell. Shrimps are also low in cholesterol content and high in vitamin B12 that helps to protect the walls of blood vessels because of that the cardiovascular health of a person can improve. Shrimps calories are low as compared to the calories of any other red meat with numerous several other nutritional contents which make it tastier and healthier option then other food stuff.

Ingredients:
·         Shrimp – 10 no
·         Sweet Chili Sauce – 2 tbsp
·         Lemon Juice – 1
·         Kaffir Lime Leaves (Tear) – 3
·         Chili Sauce – 1 tsp
·         Fish Sauce – 1 tsp
·         Garlic Cloves (Chopped) – 4
·         Palm Sugar – 1 tsp
·         Coconut Milk – ¼ Cup
·         Cilantro (Chopped) – 1bunch

Preparation Method:
Ø  Clean & devein the Shrimps & then marinate them with Lemon Juice, Sweet Chili Sauce, Kaffir Lime Leaves, Chili Sauce, Fish Sauce, Chopped Garlic and Sugar for 10 minutes.
Ø  Heat a Pan; first add marinated Shrimps & then Coconut Milk; let the Shrimps cook in low flame for around 10 minutes or till they are done. Make sure, the mixture should not be boiled.
Ø  Turn off the heat and Finally, Garnish it with Cilantro Leaves.
Lemon Shrimp is well served with Steam Rice

Stir Fry Cashew Chicken (Kai Pad Med Ma-Muang)


Stir Fry Cashew Chicken, is one of the top ten Thai dish that is quite popular among Thais & the Foreigners as well. This is basically a Chinese influenced Thai dish, as it came from China and gradually became part of Thai Cuisine with a little variation. Once prepared it not only looks great but taste quite delicious as well. Here is the recipe to prepare this stir fry dish…

Ingredients:
·         Chicken Breast (boneless) – 250 gms
·         Cashew Nut  – 50 gms
·         Capsicum (Red)–10 gms
·         Capsicum (Yellow)–10 gms
·         Capsicum (Green)–10 gms
·         Garlic Cloves (Chopped) – 4 Nos
·         Dry Red Chili (Long) – 1 (Cut into quarters)
·         All Purpose Flour – 1 tbsp
·         Soya Sauce – 2 tbsp
·         Oyster Sauce – 2 tbsp
·         Fish Sauce – 1 tbsp
·         Chili Paste – ½ tbsp
·         Salt as per taste
·         Palm Sugar – 1 tbsp
·         Cooking Oil – 3 tbsp

Preparation Method:
Ø  Cut the Chicken breast into small cubes and marinate them with 1 tbsp of Soya Sauce, ½ tbsp Palm Sugar and little Salt for 10 mins.
Ø  Deseed and cut Capsicums & Onion into diced shapes.
Ø  Heat 2 tbsp Oil in a Wok; fry the Cashew Nuts till they are golden brown; Remove them and put on an oil soaking paper; then Fry Red Chili and keep aside.
Ø  Mix Chicken Pieces with all purpose Flour and fry them till they turns light brown; take them out and put on an oil soaking paper and keep aside.
Ø  Meanwhile, take a bowl and add Oyster Sauce, Fish Sauce, 1 tbsp Soya Sauce, ½ tbsp Palm Sugar & l tbsp Water and mix well; the Sauce is ready to add.
Ø   Now heat 1 tbsp of Oil in the same wok; add Chopped Garlic & sauté for a minute, then add Onion & Capsicum and stir for couple of minutes.
Ø  Then add Fried Chicken Pieces, Cashew Nuts & Chili; then seasoned them with the prepared Sauce & mix well; finally Stir fry it for another 2-3 minutes.
Ø  Now the “Sir Fry Cashew Chicken” is ready. Serve hot.

Stir Fry Cashew Chicken is well served with Steamed Rice.

Tom Kha Gai


Tom Kha Gai is one of the top ten Thai dish that is popular, not only among Thai but among Foreigners as well. This delicious dish is believed to have been originated from Central part of Thailand. The main ingredient of Tom Kha is Galangal, a kind of root that looks similar to Ginger. It is a spicy & sour soup made of Coconut-milk, Lemon Grass, Mushroom and Chicken that boiled with Galangal. In the process, when the Galangal is boiled with all ingredients, it brings a strong flavor to the Soup and when Chilies are fried and mix with the Soup, it adds a smoky flavor. Finally a little lime juice while serving makes this Soup a perfect blend of Spicy, Sour & Sweet.

Health Benefits:
Galangal: Galangal is considered to be an herb belongs to the rhizome family. It looks like a Ginger and an integral part Thai Cuisine. It helps to alleviate abdominal discomfort caused due to inflammation. It also helps to improve the blood circulation in the body. It is a rich source of iron, sodium, vitamins A and C. Because of all these healing qualities, it has been extensively used in Ayurvedic and Chinese Traditional Medicine.
Lemon Grass: Lemon Grass is beneficial to our health in many ways. It has antibacterial and antifungal properties, which helps to prevent our body from Cold, Cough & Fever.   It lowers the cholesterol level and helps to cope with excessive fats in body. It also helps to cleanse the body by eliminating toxic substances.
Coconut Milk: Coconut Milk is made from the meat of Coconut. It helps to maintain a healthy immune system. Scientists and Nutrition experts have found that Coconut Milk contains beneficial substances that allow the stomach to digest food properly. Since Coconut milk is anti- bacterial, it kills off bad bacteria in the stomach itself. It lowers the bad cholesterol (LDL), while promoting good cholesterol. It also helps to maintain the skin and hair.

 
 Ingredients:
·         Chicken Breast – 1 pcs
·         Straw / Button Mushroom  – 20 grams
·         Tomatoes Local – 4 pcs (optional)
·         Coconut Milk – 1 Cup
·         Lemon Grass (Chopped) – 1 Stalk
·         Red Onion (Chopped) – 1 Medium
·         Water or Chicken Stock – 1 Cup
·         Kaffir Lime Leaves (Torn)– 6
·         Galangal Fresh -  6 (Slice)
·         Dry Chilies – 2 Pcs
·         Green Chili – 1 Pcs
·         Fish Sauce – 2 tsp
·         Sugar – ½ tsp
·         Lime juice – 1 tsp
·         Cilantro (Chopped) – 1 Bunch
Preparation Method:
Ø  Cut Chicken in thin strips; Slice Galangal into 6 pcs.
Ø  Take a heavy bottom Pan and add Coconut Milk, Water, Lemon Grass, Galangal, Kaffir Lime Leaves and Green Chili; bring it to boil.
Ø  Then add Chicken Pieces and cook for 5-7 mins in medium flame.
Ø  Finally add Mushroom, Fish Sauce, Sugar, Tomato pcs & cook till the chicken gets tender.
Ø  Turn off the heat and add Lime juice.
Ø  Take a Pan and heat ½ tsp of Oil; Fry the Red Chili Whole and add in the Soup.
Ø  Now the “Tom Kha Gai” is ready. Garnish with Cilantro Leaves.
Tom Kha Gai is well served with Steamed Rice.

Thai Stir Fry Vegetable with Prawn


Hi Guys!! In addition to our “Thai Cuisine”, I am going to talk about an easy recipe made of Vegetables and Prawn called “Stir fry Vegetables with Prawns”. This dish is not only delicious but also very healthy one. As we are aware that Cauliflower & Broccoli are high in vitamin C & Manganese, which are both powerful antioxidants. They are good source of dietary fibers with multiple nutrients that help to clean our digestive system with having some substance that can help to prevent cancer. Carrot is also rich in multiple nutrients that help to reduce our cholesterol, prevent us from heart attacks and warding off certain cancers. Finally Prawns are good source of protein that helps to protect the walls of our blood vessels because of which the cardiovascular health of a person can improve. Seeing all these health benefits, no one can ignore this dish. Here is the recipe in case you would like to try…

Ingredients:
·         Cauliflower – ½ Cup
·         Broccoli  – ½ Cup
·         Carrot  - ½ Cup
·         Prawn – 6-7
·         Garlic Cloves – 2 (Sliced)
·         Soya Sauce – 1 tbsp
·         Fish Sauce – 1 tsp
·         Oyster Sauce – 1 ½  tbsp
·         Pepper Powder – 2 tsp
·         Thai All Seasoning Powder – ½ tsp
·         Sugar – ½  tsp
·         Cooking Oil – 1 tbsp

Preparation Method:
Ø  Cut Cauliflower and Broccoli in medium florets.
Ø  Cut Carrot in long and thin slice.
Ø  Clean and Devein the Prawns and leave the tail in tact.
Ø  Wash and drain all the vegetables and keep aside.
Ø  Heat Oil in a Pan; add sliced Garlic and sauté for 1 min.
Ø  Add Cleaned Prawns and sauté till they turn pink.
Ø  Add all vegetables and sauté for 5-7 mins in medium flame.
Ø  Add Pepper Powder; Sugar; Soya Sauce; Fish Sauce; Oyster Sauce and cook for 2 mins.
Ø  Then add some water and cook for 2 mins.
Ø  Finally add Thai All Seasoning Powder and cook for 1 min.
Ø  Now the “Thai Stir Fry Vegetable with Prawn” is ready.

“Thai Stir Fry Vegetable with Prawn” is well served with Steamed Rice.

Stir Fry Morning Glory

Hi Folks!! In addition to our Thai Cuisine,   I am going to talk about a very common and popular Thai dish made of morning glory called “Pad Pak Bung Fai Deng”, or “Morning Glory Stir Fry”. Morning Glory is a leafy Green Vegetable and very much available throughout the season. As all of us know that Green vegetable are excellent sources of Vitamins, dietary fiber and minerals. A regular consumption of green vegetables can significantly reduce the risk of muscular degeneration, obesity and Type 2 diabetes, reason why it can be a part of any diet plan.  

For Vegetarians:
Ignore Oyster Sauce and Mushroom Sauce can be an ideal substitute.

Ingredients:-
·         Morning Glory – 250 Grms
·         Cloves of Garlic – 3 (Crushed)
·         Red Thai Chilies – 3 nos (Crushed)
·         Soya Sauce – 1 tbsp
·         Oyster Sauce – 2 tbsp
·         Salt as per taste
·         Cooking Oil – 2 tsp
·         Water – 50 ml

Preparation Method:-
Ø  Cut Morning Glories in 4 inch pieces; Separate leaves from stem.
Ø  Then wash and drain thoroughly. Keep aside.
Ø  Heat the Oil in a Pan; add Crushed Garlic and sauté for a minute.
Ø  Add Morning glory & Water: Stir fry for 2 mins.
Ø  Add Chilies, Oyster Sauce, Soya Sauce, Salt and Stir for 3 mins in high flame.
Ø  Ensure it should not be overcooked; otherwise the taste will be bad.
Ø  Now the “Stir Fry Morning Glory” is ready.
 Stir Fry Morning Glory is well served with Steamed Rice.

Chicken Liver Stir Fry

Hi Guys!! Today’s recipe is a variance of a famous Thai dish called “Pad Kueng Niey Gay”, in other words this is called as “Chicken Liver Stir Fry”. Before recipe, let me brief some health benefits of chicken liver. Chicken liver are very healthy as they provide excellent source of Iron, Vitamins & Minerals that needs to maintain our health and reason why the physicians all over the world has recommended it for anyone. Here is the recipe in case you would like to try…


Ingredients:
·         Chicken Liver – 50 gms
·         Sweet Chilli – 2 Nos
·         White Onion – 1 (Small)
·         Garlic Cloves – 4
·         Pepper Powder – 1 tsp
·         Soya Sauce – 2 tbsp
·         Oyster Sauce – 2 tbsp
·         Sugar – ¼ tsp
·         Thai All Seasoning Powder – ½  tsp
·         Water – 1 Cup
·         Oil – 2 tbsp
·         Salt as per taste

Preparation Method:
Ø  First boil water with Salt & cook Liver for 3-4 mins and drain out the water completely.
Ø  Slice Sweet Chilly & Onion. Either Pound the Garlic cloves or slice them.
Ø  Heat Oil in a Pan, add sliced Onion & Garlic; Sauté for 2-3 mins in low medium flame.
Ø  Add cooked Chicken Liver & Sliced Sweet Chilly; Stir for 5 mins in medium high flame.
Ø  Add Sugar; Pepper Powder; Oyster Sauce; Soya Sauce and cook for another 3 mins.
Ø  Finally add Thai All Seasoning Powder; mix well and cook for a minute.
Ø  Now the “Pad Kueng Niey Gay “or “Chicken Liver Stir Fry” is ready.
Chicken Liver Stir Fry is well served with Steamed Rice.

Tom Yum Kung

In addition to our Thai Cuisine, today I’m going to talk about the most favorite Thai food, called “Tom Yum Kung” or Tom Yum Goong”. According to the recent study, Tom Yum Kung stands the No1 of top ten Thai dishes being loved by the foreigners and among Thais as well. As per an artical published by CNNGo, Tom Yum Koong ranked top 8 world's best food.   Tom Yum Kung is basically a subtle blends of hot and sour soups in combination of Shrimps/Prawn with fragrant herbs. This Thai delicacy is not only delicious but also nutritious as well. We get proteins from Shrimps and fiber with other nutritional benefits from herbs.  There are many variations of Tom Yum available these days. You can add Chicken, Fish, Beef or any type of Sea foods as per your choice and if you are a vegetarian you have an option too by adding either Button Mushrooms or Oyster Mushrooms. If I have to choose a Thai dish, without exception I’ll opt for Tom Yum Kung. Here is the recipe in case you would like to try…

Ingredients:
·         Chicken Stock/ Water – 2  Cups
·         Lemon Grass – 1 (Stalk) – Crushed and cut into ½ inch pieces
·         Thai Chilli (Fresh) – 4 (if you want spicy you can add more)
·         Galangal – 1 Piece(Sliced)
·         Kaffir Lime – 3-4  leaves (torn into pieces)
·         Small Red Onion – 2 (Sliced )
·         Button Mushroom – ½ Cups (Sliced in half)
·         Shrimp – 8-10  Pieces
·         Cherry Tomatoes – 2 (Optional)
·         1Fresh Lime or Lime Juice – 2 tbsp
·         Coconut Milk : ½ Cup (Optional)
·         Fish Sauce / Salt – as per taste
·         Chilli Paste – 1 tbsp

Preparation Method:
Ø  Clean and devein the Shells of Shrimps and leave the tail intact.
Ø  Boil Chicken Stock / Water in deep pot in a medium high flame.
Ø  Add Sliced Onion; Galangal Pieces; Crushed Lemon grass and cook for 5 minutes.
Ø  Then add cut Mushrooms and Shrimp: cook for 5 minutes or till the Shrimps turn pink.
Ø  Add Chilli Peppers; Chilli Paste; Coconut milk: fish sauce and cook for 5 minutes in a low flame.
Ø  Season with Lime Juice and mix well.
Ø  Now the “Tom Yum Kung” is ready. Serve hot.

Tom Yum Kung is well served with Steamed Rice, Thai Fried Rice and Thai Boiled Noodles.
