Pulao (Vegetarian)


Hi Guys!!!  Today we will talk about a Rice based dish called Pulao, which is very much popular among Indians. Basically this dish is cooked with Rice and Vegetables. Pulao is normally served in India on special occasions. When I feel not to cook more than one dish, I prefer to go for a Pulao. It is very delicious and a time saver for me. Here is the recipe in case you would like to try…   

Ingredients :-
·         Basmati Rice – 250 gms
·         Cauliflower ( Big Florets) – ½ Cup
·         Potatoes (Medium Cubes) – ½ Cup
·         Carrot (Medium cubes) – ½ Cup
·         Matar (Green Peas) – ½ Cup
·         French Beans (Medium Slice) – ½ Cup
·         Onion -1 Large (slice)
·         Ginger – Garlic Paste – 2 Tbsp
·         Green Chilly – 2
·         Turmeric Powder – 1 tsp
·         Red Chilly Powder – 1 tsp
·         Cumin Powder – ½  tsp
·         Coriander Powder – ½ tsp
·         Bay Leaf (Tej Patta) – 1
·         Cinnamon Stick (Dalchini) – ½
·         Small Cardamom (Elaichi)– 2
·         Cloves (Laung) – 2
·         Black Pepper (Gol Mirchi) – 4
·         Cumin Seeds – ½ tsp
·         Salt as per taste
·         Cooking Oil – 4 tbsp
·         Ghee – ½ tbsp (If not available can use Butter)

Preparation:-
Ø  Cut all the Vegetables. Wash and drain it.
Ø  Cut Onion in slice and Green chilly in lengthwise.
Ø  Grind Ginger and Garlic to make a paste.
Ø  Take a pan and heat 1 tbsp of Oil high flame.
Ø  Fry the Rice for 3 mins.
Ø  Now take a heavy bottom pan and heat 3 tbsp of Oil on high flame.
Ø  Add Cardamom, Cinnamon stick, Bay Leaf, Cloves, Black Pepper, Cumin Seeds and fry all for 5 sec.
Ø  Add Green Chilly and saute for 2 sec.
Ø  Add Onion and sauté till it turns light golden in medium flame.
Ø  Add Ginger – Garlic Paste and saute till its raw smell goes off.
Ø  Add all the vegetables and mix well.
Ø  Add Turmeric Powder, Red Chilly Powder, Cumin Powder, Coriander Powder and little bit salt with the vegetables and sauté for 5-10 mins.
Ø  Add the Rice; Mix well and Saute it for 5 mins.
Ø  Take out the mixture and put in a Rice cooker, if not available you can also cook in the same pan on medium flame.
Ø  Add boiled water (must be double the quantity of rice).
Ø  Finally add Salt and Ghee.
Ø  Cover the lid till the Rice is cooked (Approx 15 mins).
Ø  Now the Pulao is ready

Pulao is well served with  Curd/Raita and with any Vegetarian and  Non Vegetarian dishes .
